About This Summit

Join Coolfood for a special two-day summit in the culinary capital of Copenhagen, where we’ll explore the innovative ways that cities and businesses are working together to take a bite out of climate change.

Cities are vibrant hubs for eating outside the home – in restaurants, school cafeterias, hospitals, corporate dining facilities and more. This gives cities and the businesses providing food an unparalleled chance to scale healthy, sustainable meals, and thereby help the world get on a path to building an equitable global food system that benefits people and nature.

Reducing food’s emissions is an urgent social, health and environmental issue – but it’s also a delicious opportunity.

This summit offers invited guests the chance to:

  • Meet WRI’s renowned experts on food and climate,
  • Network with influential leaders in the movement for healthy, sustainable meals,
  • Be first to hear cutting-edge behavioral science findings for how to market low-carbon food,
  • Learn from a diverse group of speakers about policy trends to watch, how procurement can be made more sustainable; and
  • Understand how the public and private sectors can take their climate action to the next level through food.

We are honored to showcase how Copenhagen is one among many cities leading the charge for climate-friendly food – as such, guests can expect an immersive offering of Copenhagen’s celebrated food scene.

8:30 – 15:30 | Optional Low-Carbon Training for Your Organization’s Lead Chef 
RSVP required as space is limited. Contact Katherine.Murtha@wri.org to express interest in joining this training. Breakfast and lunch provided.

A special training to equip chefs and craftspeople with the knowledge, tools and inspiration to serve more plant-forward meals. This session is hosted by MAD Academy, which was founded in 2019 by René Redzepi of restaurant Noma and executive director Melina Shannon-DiPietro. MAD Academy is taught by luminaries in the fields of gastronomy, science, business, and the arts.

Hosted by WRI Europe

Join us as we open Coolfood’s 2024 Summit with a dynamic session and discussion of key themes and stories for food and climate action in 2024. World Resources Institute leaders will share practical tips for your organization to reduce food-related emissions, followed by a Q&A with the opportunity to ask experts your burning questions.

Afterwards, stay for drinks and nibbles from some of Copenhagen’s most exciting restaurants – plus the chance to meet and connect with fellow Summit attendees.

9:30 – 10:30 | Panel: A Vision for a Healthy, Sustainable Food Future in Europe

From a national action plan in Denmark to changing school menus, promoting sustainable diets is landing on more and more climate and policy agendas. What are the trends to watch? What levers can governments and the private sector activate? And what’s necessary for successful partnerships on sustainable food? This session will present a vision for Europe’s food future and outline action items to be a leader in this arena.

This session will give a first look at brand new insights from Coolfood’s forthcoming playbook, Guiding Diners Toward Plant-Rich Dishes in Food Service. WRI’s behavioral scientists have spent over a year looking into the latest no-regret strategies for engaging customers and diners in climate action through food.

11:30 – 12:10 | Panel: Leveraging Behavioral Science to Take a Bite Out of Climate Change

A panel of business and city leaders from across Coolfood’s membership in Europe will share how they are applying Coolfood’s behavior change model. Guests will hear the good, the bad, and the ugly from these members’ experiences shifting consumer choices toward low carbon meals.
